Reasons to be Thankful...



Pumpkin Streusel Bread

3/4 cup oil
3/4 cup brown sugar, packed
2 eggs
1 cup canned pumpkin
1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1/2 tsp pumpkin pie spice


  •  In a medium sized bowl, mix oil, sugar, eggs and pumpkin until combined
  •  In a separate small bowl, sift flour, baking powder, soda, salt and spices and whisk together
  •  Gradually add dry mixture to wet mixture and mix until just combined

Streusel Topping

In a bowl, combine 3/4 cup packed brown sugar, 1/2 cup flour and 1/2 teaspoon cinnamon.  Using a pastry cutter or two forks, cut in 1/3 cup of butter until mixture resembles coarse crumbs.  Stir in 1/2 cup chopped walnuts.
